Meet our apprentice chef DILLON!
Dillon is a born and bred Islander originally growing up in parndana which is well known as the KI farming area.
The dish pictured is his VEGAN eggplant rollatini - marinated eggplant chargrilled and wrapped around a vegan house made ricotta stuffing oven baked in a rich marinara sauce.
Dillon loves kangaroo island for its beaches and because his family lives here. It’ll always be home to him even though he’s hoping to move to the city once he finishes his apprenticeship next year 🏖️
Dillon’s favourite part about being a chef is cooking and seeing people happy over the food he makes them 🍽️
Dillon will go far as a chef and who knows maybe he’ll come back and settle down as our very own head chef once he spends the next few decades honing his skills in other places 🌇
